Making Chicken Fajita Rice Bowls

  1. Put the rice and water in a saucepan, bring to the boil, cover and cook over low heat for 15 minutes. Leave covered for 5 minutes, then fluff.

  2. Meanwhile, toss the chicken with the lime juice, cumin, paprika, garlic powder and oregano. Marinate for 10 minutes.

  3. Heat half the oil in a large frying pan over high heat. Cook the chicken for 6 minutes, until browned and cooked through. Lift it out.

  4. Add the remaining oil, peppers and onion and cook for 5 minutes, until charred at the edges. Return the chicken and toss. Serve over the rice with the cilantro.

Why It Works

What gives fajitas their flavour once the salt is gone? Cumin, smoked paprika, garlic powder, oregano and lime. Those five do nearly all the work, and a hot pan adds the char that finishes it. The marinade takes 10 minutes.

Slice the chicken thin and the peppers and onion into strips, and cook them in a very hot pan so that the edges char before the vegetables go limp. Cook in batches if the pan is small. Do not crowd the pan. The rice is cooked separately in water, and a squeeze of lime goes over it at the end.

Rice replaces the tortilla, which is where a good share of the sodium in fajitas hides. Plain white rice is also the lighter choice for potassium and phosphorus. Top the bowl with cilantro and lime. Leave out the cheese and jarred salsa, which are the salty parts of the usual plate.
