Soak the noodles in a bowl of hot tap water for 10 minutes, until they bend but still have some bite. Drain.

Heat half the oil in a large frying pan or wok over high heat. Stir-fry the chicken for 4 minutes, until golden and cooked through, and lift it out.

Add the remaining oil, cabbage and carrot and stir-fry for 3 minutes. Add the garlic, ginger and spring onions and cook for 30 seconds.

Return the chicken, add the noodles, lime juice, sesame oil and chilli flakes and toss for 3 minutes, until the noodles are tender. Scatter with the cilantro.
