How to Make Chicken and Green Bean Stir-Fry

  1. Mix the soy sauce, rice vinegar, cornflour, water and pepper in a small bowl.

  2. Heat half the oil in a large frying pan over high heat. Cook the chicken in two batches, 3 minutes each, until golden. Tip onto a plate.

  3. Add the remaining oil and the beans and stir-fry for 2 minutes. Add a splash of water, cover and cook for 2 minutes. Add the garlic and ginger and cook for 30 seconds.

  4. Return the chicken, add the sauce and toss for 1 minute, until glossy and the chicken is cooked through. Drizzle with the sesame oil.

  • Trim and halve the beans so that they cook evenly.
  • Keep the heat high, but lift the pan off the burner if the garlic darkens.
  • Dry the beans after washing them; wet beans steam the chicken.

Why the Method Is What It Is

Chicken, green beans, garlic and ginger: four things and one pan. A tablespoon of low-sodium soy sauce across four servings is the only salt in the recipe, so the flavour has to come from the ginger and garlic. Be generous with both. Ginger and garlic go in late, because both turn bitter if they burn.

Green beans need a head start. Add a splash of water to the pan after they go in, and cover for 2 minutes, so that they steam through while still bright green. Cook the chicken first, in a single layer, and in two batches. Combine everything with the sauce at the end.

Rice vinegar and a little cornflour turn the soy sauce into a sauce that clings. It takes 1 minute to thicken. Serve it with white rice, which keeps the plate light in potassium and phosphorus compared with brown. Taste the sauce before it goes in, and add a little more rice vinegar if it needs lifting.
