Chocolate, cream, condensed milk: four ingredients that you probably have, and an ice cream with no machine and no custard. It is a recipe for anyone who has never made ice cream.

The chocolate has to be melted and cooled before it goes near the cream. Warm chocolate melts the whipped cream, and the air that makes the ice cream soft is gone. Cool the chocolate until it is barely warm to the touch. That takes about 10 minutes after melting.

Whisk the cocoa into the condensed milk until smooth, then stir in the cooled chocolate. Whip the cream to stiff peaks in a separate bowl and fold the two together in three parts, gently, so that the cream keeps its volume.

Spoon into a tin, level the top, cover and freeze for 6 hours. Let it stand for 10 minutes at room temperature before scooping. The cocoa gives a bitter edge that stops the ice cream from being too sweet.
