Slice the breasts into thin cutlets before they go anywhere near the marinade. Thin cutlets cook through in about 5 minutes a side, which is fast enough for a weeknight and gentle enough that the meat stays juicy. Lime does two jobs here. It flavours the chicken, and its acid softens the surface.

  1. Whisk the lime juice, lime zest, 1 tbsp of the oil, the cilantro, garlic, cumin, chilli powder, salt and pepper in a shallow dish.

  2. Add the chicken and turn to coat. Leave it for 10 minutes while the pan heats.
