-
Put the rice in a fine sieve and rinse under cold running water for 1 minute, until the water runs almost clear. Drain well.
-
Heat the oil in a medium saucepan with a tight lid over medium heat. Add the rice and stir for 1 minute until the grains are coated and look slightly translucent.
-
Add the water and salt, bring to a boil, then reduce the heat to the lowest setting and cover tightly.
-
Cook for 15 minutes without lifting the lid.
-
Take the pan off the heat and let it steam, still covered, for 10 minutes.
-
Fluff the rice with a fork, then gently stir in the lime juice, zest and coriander. Taste and add a pinch more salt if needed.
Tips for Making Cilantro Lime Rice
- Rinse the rice until the water is clear. The loose starch on the surface is what makes rice clump together.
- Do not lift the lid while the rice cooks or during the resting time. The steam is doing the cooking.
- Add the lime and coriander at the end. Both lose their fresh flavour in the heat, and the juice added early can make the rice tough.
