Why It Works
A Sunday dish for a table of six, and one that needs little more than salt, garlic and patience. Cordero asado castellano is the lamb roast of Castile, cooked in a clay dish in a wood oven, with only a splash of water in the bottom of the dish and a spoonful of lard on top.
Use a shoulder of lamb on the bone, which has more fat and holds its moisture. Rub it all over with salt, crushed garlic and a spoonful of lard, and put it in a roasting dish with a glass of water. Do not add oil or stock, because the juice of the lamb itself makes the gravy. Roast at 180°C / 355°F for 2 hours, turning the joint once and basting with the juices every 30 minutes.
The lamb is ready when the meat pulls from the bone and the top is brown and crisp. Rest it for 15 minutes under foil. Spoon off excess fat from the juices and serve them as a thin gravy. Eat with roast potatoes, a crisp green salad and plenty of bread.
Storage and Reheating
Keeps for 3 days in the fridge.
Changing the Recipe
- An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
- A dry vermouth keeps for longer than an open bottle of white wine and is the closer swap than a random white left in the fridge; for an alcohol-free version, use the same amount of stock with a squeeze of lemon.
Good With
- Roast potatoes
- Green salad
- Red wine
