  1. Put the chicken in a 4 to 5 litre slow cooker, scatter the cubed cream cheese over it, and sprinkle with the parsley, dill, garlic powder, onion powder, chives, salt and pepper.

  2. Pour in the stock, cover, and cook on high for 3 hours or on low for 6 hours, until the chicken shreds easily and reads at least 74°C / 165°F.

  3. While the chicken cooks, fry the bacon in a frying pan over medium heat for 8 minutes, until crisp. Drain on kitchen paper and crumble.

  4. Shred the chicken with two forks straight in the slow cooker and stir it into the creamy sauce.

  5. Stir in half of the cheddar and half of the bacon, cover, and leave for 10 minutes on the warm setting to melt.

  6. Top with the rest of the cheddar and bacon and the spring onions and serve.

Tips for Making Crack Chicken

  • Do not lift the lid while the chicken cooks. Each peek lets out heat and adds up to 20 minutes to the time.
  • Cut the cream cheese into cubes before it goes in. It melts evenly into the liquid and does not sit in lumps.
  • Serve it on something plain. The filling is rich and salty, so soft rolls, rice or a baked potato make a balanced meal.

Common Substitutions & Variations

  • Out of spring onions? A small regular onion, finely sliced, or a few chives stirred in at the end both cover the job.
  • Vegetable stock in place of the chicken stock makes this meat-free without changing the method, if that is what you need.
  • Fresh herbs work in place of the dried dill at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.

What to Serve with Crack Chicken

  • Soft slider rolls
  • Steamed rice
  • Roasted green beans

Storing & Reheating Crack Chicken

Keeps in the fridge for up to 4 days and reheats well in a pan or the microwave with a splash of stock. Freeze the cooked, shredded chicken without the bacon for up to 3 months and thaw it in the fridge overnight before reheating.
