  4. Add the tofu puffs for the last 5 minutes and the prawns for the last 3 minutes.

Things to Watch For

  1. Do not rush the paste.
  2. Add the prawns last so they stay tender.
  3. Serve with extra sambal at the table.

Changing the Recipe

  • If coconut is a problem, a cooking cream (dairy or plant-based) can stand in for the coconut milk in a sauce; the dish will lose the coconut flavour and taste noticeably different.
  • Dried chilli flakes can stand in for the red chillies. Heat varies a great deal between chillies and between jars, so start with a small pinch and add more to taste.
  • Lemon is the everyday swap for limes in this kind of dish — the acidity plays the same role even though the flavour is not identical.

Good to Know About Curry Mee

The broth is the dish. Curry mee is a Malaysian noodle soup in which a rich, spicy coconut curry stands in for stock, and everything else is a topping. The flavour comes from a paste of dried chillies, shallots, garlic, lemongrass, galangal and turmeric, fried in oil until the kitchen smells of chilli and the oil turns red.

Cook the paste patiently. 8 minutes over a medium heat is the minimum, and the oil should separate at the edges. Add the chicken stock and coconut milk only after the paste is cooked. Otherwise the curry tastes raw and harsh.

The liquid is a mix of stock and coconut milk, about two parts to one, so the soup is rich but not heavy. Add chicken thighs and simmer for 15 minutes. Tofu puffs soak up the broth like sponges; put them in for the last 5 minutes, along with the prawns for 3.

Blanch the noodles and bean sprouts for 1 minute. Divide between bowls, ladle the curry over, and finish with mint, a spoonful of sambal and a squeeze of lime.
