  1. Fill a coupe glass with ice and cold water to chill it while you mix the drink.

  2. Fill a cocktail shaker two-thirds with ice. Add the rum, lime juice and sugar syrup.

  3. Shake hard for 15 seconds, until the shaker is painfully cold.

  4. Tip the ice and water out of the glass and strain the drink into it.

  5. Float the lime wheel on the surface.

Chef’s Tips

  • Squeeze the lime juice to order. It loses its bright aroma within the hour, and the drink tastes flat.
  • Taste and adjust the balance. Add a teaspoon more syrup if your limes are very sharp, or a little more lime if they are mild.
  • Shake hard for the full 15 seconds. The dilution from the ice is part of the recipe.

Common Substitutions & Variations

  • Lemon is the everyday swap for lime in this kind of dish — the acidity plays the same role even though the flavour is not identical.

Pairing Suggestions

  • Ceviche
  • Grilled shrimp
  • Plantain chips

Storage & Reheating

Made to order. The syrup keeps in the fridge for a month, but the lime juice loses its brightness within an hour of squeezing.
