Frozen banana is the nearest thing to ice cream that comes out of a fruit bowl. When frozen and blended, it breaks down into a smooth, creamy, soft-serve-like mass because of its high starch and low water content, and it needs nothing else to give a thick shake. Add oat milk and vanilla and you have a dairy-free shake in minutes.

Slice the bananas before freezing, in rounds about 2 cm thick, and spread them on a tray in a single layer for 2 hours before bagging them. A whole frozen banana is hard to blend and strains the motor, whereas frozen slices go through easily. Use ripe, brown-spotted bananas, which are sweeter and more fragrant. Green ones taste starchy.

Blend with the liquid at the bottom. Pour the oat milk into the jug first, then add the banana slices, so that the blades have something to catch. Start slowly and use the tamper if your blender has one. Add the milk gradually: you want a thick, spoonable shake that holds a straw upright.

A tablespoon of peanut butter or cocoa turns it into a different flavour, and a few dates add extra sweetness. Pour into cold glasses and serve right away, because the shake melts and thins quickly. This quantity makes two servings.
