Egg Noodle Stir Fry
Egg noodles stir-fried with cabbage, carrot, spring onion and a soy and oyster sauce glaze. Two servings in 20 minutes.
Everything must be ready before the pan is hot. The vegetables are cut, the sauce is mixed, the noodles are rinsed and loosened. The cook itself takes 5 minutes, and that is no time to be hunting for the soy.
A stir-fry needs a hot pan. Heat it until a drop of water skitters across, then add the oil. If the vegetables hiss as they land, the heat is right.
Cabbage and carrot cost little and hold up well to high heat. Cut them thin so they cook in the same time as the noodles take to warm.
Toss rather than stir. Lifting and turning keeps the noodles whole and gets heat to every strand. Oyster sauce adds a sweet, savoury depth that soy alone lacks. A stir-fry is mostly about the order of cooking, so put the hardest vegetables in first and the softest last. Cut everything small and thin, and the pan finishes the whole dish in minutes.
