Hong Kong dim sum tarts with a short, biscuity crust and a wobbling, barely-set custard that should be smooth and glassy on top. No caramelisation — these are not pastéis de nata.

Beat the butter and icing sugar for 3 minutes, then beat in the egg.

Fold in the flour and salt until it just comes together. Wrap and chill 45 minutes.

Bake 10 minutes, then reduce to 160°C / 320°F and bake 12 to 15 minutes more.

They are ready when the custard is set at the edge and wobbles as a single mass at the centre. Cool 10 minutes in the tins and eat warm.
