Why the Method Works
A birthday for twelve, a street party, a school fair: fruit punch is the drink for a crowd. It needs no skill, only a large bowl and cold ingredients.
The base is three juices, chosen to balance each other. Pineapple gives sweetness and a tropical scent, orange gives body, and cranberry gives colour and a little tartness. Mix the juices ahead and add the fizzy drinks at the end. Lemonade and sparkling water go flat quickly, so they should meet the punch just before it is served.
Slice the fruit and add it to the bowl. The oranges and strawberries give colour, and the fruit soaks up the juice and is nice to eat from the bottom of a glass.
Keep the bowl on ice if the day is hot. Taste once everything is in, and add a little more lemonade if the punch is too sharp or more cranberry juice if it is too sweet.
Leftovers, Reheating and Keeping
Best on the day. Keeps the mixed juices in the fridge for 2 days.
