  1. Pour the coconut water into a blender jug and add the spinach and lime juice. Blend on high for 30 seconds, until the spinach has broken down completely.

  2. Add the banana, pineapple, cucumber, ginger and ice. Blend on high for 45 seconds, until smooth.

  3. Taste and add a little more lime juice, or a splash of water if it is too thick. Pour into two glasses.

Chef’s Tips

  • Blend the spinach with the liquid first. It breaks the leaves down completely and leaves no flecks.
  • Use a ripe banana and frozen pineapple. They provide the sweetness and the cold that hide the greens.
  • Drink it soon after blending. The colour turns from bright to dull green after about an hour.

Common Substitutions & Variations

  • Lemon is the everyday swap for lime in this kind of dish — the acidity plays the same role even though the flavour is not identical.
  • A quarter-teaspoon of ground ginger per tablespoon of fresh is the standard ratio if you are working from the spice rack rather than a fresh root.

Pairing Suggestions

  • Overnight oats
  • A handful of almonds
  • Avocado toast

Storage & Reheating

Best drunk straight away. It keeps in a sealed jar in the fridge for up to 24 hours, though the colour dulls, so shake it before drinking.
