A pineapple salsa does the job of a tomato salsa. It is fresh and sharp. Against hot, smoky chicken it cools the plate, and it carries about half the potassium, which matters when the chicken already supplies a good share. Fresh fruit salsa is a good way to use up half a pineapple.
