  1. Cook the onions in the lard over low heat for 20 minutes until golden and almost melted.

  2. Add the beef and brown for 10 minutes.

  3. Take the pot off the heat, stir in the paprika and purée, then the garlic, caraway, marjoram and stock.

  4. Cover and simmer on low heat for 2 hours, stirring now and then.

  5. Season with the salt and serve with the dumplings.

A Few Pointers

  • Use as many onions as beef.
  • Add the paprika off the heat.
  • Make it a day ahead if you can.

Why the Method Is What It Is

Compare it with the Hungarian gulyás and the Czech version is thicker, with more onions and less paprika. Guláš is the Czech beef stew, a staple of every pub menu, and it is flavoured with caraway, marjoram and garlic. It is a dish that Czechs have made their own since the days of the Austro Hungarian Empire.

Use as many onions as meat, by weight. Cook the onions slowly in lard for 20 minutes, until they are golden and almost melted, because they form the thick sauce, with no flour. Add the beef, cut into 3 cm cubes, and brown it. Take the pot off the heat before adding the paprika and tomato purée, as paprika turns bitter if it burns. Stir in garlic, caraway and marjoram, then the stock.

Simmer, covered, for 2 hours on a low heat, stirring now and then, until the beef is very tender and the sauce is thick and glossy. Add a little water if it catches. Serve with bread dumplings and a slice of raw onion on the side. The goulash is better the next day, and reheats well.

Good Alongside

Bread dumplings · Czech lager · Pickled peppers

Swaps and Variations

  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
