Method

  1. Chop half the prawns to a rough paste and cut the other half into 1 cm pieces.

  2. Mix all the prawns with the pork fat, bamboo shoots, cornflour, salt, sugar, wine, sesame oil and white pepper. Refrigerate 30 minutes.

  3. Whisk the wheat starch, tapioca starch and salt together in a heatproof bowl.

  4. Pour the boiling water in all at once, stirring hard with a chopstick until it comes together in a lump.

  5. Cover 2 minutes, then add the oil and knead the hot dough on an oiled surface until smooth and glossy.

  6. Roll into a rope and cut into 24 pieces. Keep them covered — this dough dries in minutes.

  7. Flatten each piece with the oiled flat of a cleaver into a 8 cm round.

  8. Put a spoonful of filling in each, fold over and pleat one side only, pressing each pleat against the flat back.

  9. Set them on oiled baking paper in a steamer, well apart.

  10. Steam over rapidly boiling water 8 minutes, until the wrappers are translucent and the prawn is pink.
