Put the potatoes and carrots in a large saucepan with the water and salt. Bring to the boil, then reduce the heat, cover and simmer for 10 minutes.

Add the green beans and wax beans, cover and cook for 8 minutes, until the vegetables are nearly tender.

Add the peas and cook for 3 minutes.

Reduce the heat to low. Stir in the butter and cream and warm the vegetables in the liquid for 3 to 4 minutes, without boiling, until the butter has melted and the broth is creamy.

Season with pepper and add more salt if needed. Ladle into bowls with plenty of the broth and sprinkle with parsley.
