The Short Version
Hot sauce, cold ice cream, and about a minute to eat it. That is the whole idea of a sundae, and it only works if the contrast is sharp. The sauce goes on warm, not scalding, and the ice cream comes straight from a freezer set hard. Contrast is everything.
The fudge sauce here is cooked from cocoa, sugar, cream and butter, with a pinch of salt to stop it tasting flat. Whisk the cocoa and sugar into the cream before the pan goes on the heat, so there are no dry lumps to chase later. Simmer for 5 minutes, no more. Longer and the sauce sets to a toffee-like chew as it cools; shorter and it stays thin.
Scoop the ice cream into cold glasses so it melts slowly. Spoon the sauce over, add a swirl of whipped cream and top each glass with a cherry. The sauce keeps in a jar, and it reheats gently in a pan or the microwave. A cherry finishes the glass.
