Good to Know About Huevos Divorciados
Divorced eggs get their name from the plate: two eggs, kept apart by a strip of refried beans, one wearing red salsa and the other green. They are an everyday Mexican breakfast, and the cook's job is mainly to keep the elements hot and the yolks soft.
The tortillas are crisped lightly in oil, so they stay firm enough to carry the eggs, not so hard that they shatter. The red salsa is tomato and chilli, the green salsa tomatillo and coriander, and both should be warm. If you are using ready-made salsas, heat them in a small pan for a few minutes first.
Fry the eggs in a little oil over medium heat until the whites are set and the yolks are still runny, and slide each onto a tortilla. Spoon salsa over, keeping the colours apart, and add refried beans in a line between. Finish with crumbled cheese and coriander.
