Why the Method Works
Stroganoff takes its name from a Russian noble family, according to the usual account, and the dish has travelled widely since. The Instant Pot version cooks the noodles in the same pot as the beef, so there is one pan to wash and the noodles drink up the sauce as they soften.
Slice the beef thinly across the grain, into strips about the thickness of a finger. Sirloin or rump cooks fast, and thin strips stay tender in the short time under pressure. Brown the beef first, for flavour, then set it aside while you cook the onions and mushrooms.
Add the soured cream off the heat. If the sauce is boiling when the cream goes in, it splits into grainy curds. Open the lid, switch the pot off, stir the cream in slowly, and the residual heat will warm it through.
A spoonful of Dijon mustard and a splash of Worcestershire sauce add depth, and a little paprika gives colour. Serve straight away, scattered with parsley, because the noodles continue to absorb liquid as they sit.
Storage and Reheating
Keeps for 2 days in the fridge. Add a splash of stock when reheating as the noodles absorb liquid.
Common Substitutions & Variations
- An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
Good With
- Green salad
- Pickled gherkins
- Steamed peas
- Crusty bread
