A Few Pointers
- Grease the moulds well for easy turning out.
- Cover the moulds so that no water drips in.
- Let them rest before unmoulding.
Why the Method Is What It Is
Blend the eggs for a full 20 seconds. The key to a smooth, custardy bite, with the velvety texture of a soufflé, is to whip in plenty of air and break up every strand of egg white. A blender also incorporates the cottage cheese, which makes the bites creamy and light without any flour or cream.
The pressure cooker is a gentle device for this. A cup of water in the base and a trivet above it create steam, and the egg mixture, in covered silicone moulds, sets slowly. In 8 minutes at high pressure, followed by a 2 minute natural release, the bites puff up and set without browning or becoming rubbery.
Cover the moulds with foil so condensation does not drip into the eggs. Fill them only three-quarters full, since the mixture rises. Take them out with the trivet, let them stand for a few minutes and turn them out with a knife. They are good hot or cold, so make a batch for the week.
