Method

  1. Whisk both flours, the cornflour, salt and water to a batter the consistency of single cream, then stir in the chopped spring onion. Leave 20 minutes.

  2. Heat a large flat pan or crepe pan over medium heat and brush it with oil.

  3. Ladle in a portion of batter and spread it immediately in one continuous spiral with the back of the ladle, as thin as you can.

  4. Crack an egg onto the crepe within 20 seconds and spread it across the surface with a spatula.

  5. Scatter with sesame seeds and coriander, then flip the whole crepe over.

  6. Brush the top with sweet bean sauce and chilli sauce.

  7. Scatter with spring onion and pickled mustard stem and lay the cracker across the middle.

  8. Fold both sides in over the cracker, then fold in half and cut across. Eat immediately.

  • Out of spring onions? A small regular onion, finely sliced, or a few chives stirred in at the end both cover the job.
  • A pinch of dried chilli flakes works in place of fresh chilli — start with about a third of the quantity the chilli in the list implies, since dried chilli is more concentrated, and add more to taste.
