Ingredient Swaps

  • Out of spring onions? A small regular onion, finely sliced, or a few chives stirred in at the end both cover the job.
  • A quarter-teaspoon of ground ginger per tablespoon of fresh is the standard ratio if you are working from the spice rack rather than a fresh root.
  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.

The Short Version

This is a fast weeknight dinner that tastes of a Korean barbecue: salty, sweet, garlicky and with a gentle heat. The lettuce makes it light, and it is eaten with the hands.

Brown the mince hard, until the pan is dry and the meat has dark edges. Do not stir too much, since the contact with the pan is what browns it. Break it up with a spoon and let it sit between turns.

Stir in the garlic and ginger for 30 seconds, then pour in the sauce of soy, brown sugar, sesame oil and gochujang. Let it bubble for 2 minutes until it clings to the beef. If your hob runs hot, check at 1 minute, as the sugar can catch.

Choose crisp, cup-shaped lettuce such as little gem. Spoon a little warm beef into each leaf with some rice, then top with sliced spring onion, cucumber and sesame seeds. Eat at once, while the beef is warm and the lettuce is cold.
