Tips for Success

  • Cut the wedges the same size so they cook evenly.
  • Use two trays rather than crowding one.
  • Serve straight from the oven; they soften as they cool.

Why the Method Is What It Is

Kumara, oil, salt: three things and a hot oven. Kumara is the New Zealand name for sweet potato, and a tray of wedges roasted until crisp at the edges and soft in the middle is among the best things to do with one. Heat does the work.

Sweet potato holds a lot of sugar and water, so it browns quickly and goes soft rather than crisp unless the tray is treated well. Cut the wedges to an even thickness, and spread them out with space between each, never touching. Do not crowd the tray. Crowded pieces steam each other and turn limp, and two trays will be better than one overloaded one.

Toss the wedges in oil, salt and paprika, and roast on a high shelf in a hot oven, turning once. A pinch of cornflour in the coating gives an extra-crisp shell. Serve straight away with a dipping sauce of soured cream, sweet chilli or aioli. The chips lose their crispness within a few minutes of leaving the oven. Dip them in anything.
