  1. Season the rabbit with the salt. Heat the butter and oil in a casserole and brown the rabbit for 8 minutes, turning. Lift out.

  2. Cook the mushrooms in the same pot for 6 minutes until golden. Add the shallots and garlic for 2 minutes, then the tomato purée.

  3. Pour in the wine, boil for 2 minutes, then add the stock and tomatoes.

  4. Return the rabbit, cover and simmer gently for 60 minutes until tender.

  5. Stir in the tarragon and taste for salt.

Tips for Making Lapin Chasseur

  • Brown the rabbit well before braising.
  • Cook the mushrooms in batches so they colour.
  • Add the tarragon at the end.

Ingredient Swaps

  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
  • A dry vermouth keeps for longer than an open bottle of white wine and is the closer swap than a random white left in the fridge; for an alcohol-free version, use the same amount of stock with a squeeze of lemon.

Serving Suggestions

  • Mashed potatoes
  • Tagliatelle
  • Green beans

Leftovers and Storage

Keeps for 3 days in the fridge. Reheat gently.
