Why It Works

Short and sharp: a pie is the best use for what is left over from the roast. Ham from a boxing day table goes into a sauce, under a lid, and becomes a fresh meal.

Cook the leeks in butter first, for 6 minutes, until soft. Stir in the flour, then add the milk a little at a time. Make the sauce thick, because the ham and leeks will thin it. It should coat a spoon and leave a trail when you drag a finger through it.

Add the cheddar, mustard and parsley off the heat, then fold in the diced ham. Taste for salt last, since ham is salty already and the cheese adds more.

Tip the filling into a pie dish, cover with the pastry, press the edges down and brush with egg. Cut a steam hole in the middle. Bake at 200°C / 390°F for 25 minutes, until the pastry is deep gold. If your oven runs hot, check at 20 minutes. Let it stand for 5 minutes before cutting.
