Wet your hands to shape the sticky dough.

Use a serrated knife and a sawing motion to slice.

  1. Heat the oven to 180°C / 355°F. Whisk the eggs, 200 g sugar, oil and vanilla until smooth.

  2. Stir in the flour, baking powder, salt and almonds to make a sticky dough.

  3. With wet hands shape the dough into 2 logs, each about 30 cm long, on a lined tray. Bake for 30 minutes until golden.

  4. Cool the logs for 10 minutes, then slice into 24 pieces about 1.5 cm thick. Mix the 2 tablespoons sugar with the cinnamon and sprinkle over.

  5. Lay the slices on their sides and bake for 15 minutes, turning once, until dry and golden.

What's Going On Here

Mandelbrot is the Jewish cousin of biscotti, with oil rather than butter, and it is dunked in tea or coffee at the end of a meal. The name means almond bread in Yiddish, and the cookie is crunchy, nutty and not very sweet. Crunch is the goal.

The dough is soft and sticky, mixed from eggs, oil, sugar, flour and almonds, and it is shaped into two flat logs on a lined tray, wet hands making it easier to handle. Do not skip the cooling pause between bakes. The warm logs are too fragile to slice, and a ten-minute rest firms them enough to cut cleanly into slices with a serrated knife.

Lay the slices on their sides and bake again until the cut edges are dry and golden, turning once for even colour. A dusting of cinnamon sugar before the second bake gives a sparkling crust. The cookies harden as they cool and keep well in a tin for weeks, which makes them a good gift. Dunk away.
