Manti

Method

Mix the flour, dough salt, egg and water into a firm dough and knead 10 minutes until smooth.

Wrap and rest 30 minutes.

Mix the lamb with the grated onion, filling salt, black pepper and pepper flakes.

Beat the yoghurt with the crushed garlic and yoghurt salt and leave at room temperature.

Roll the dough out as thin as you possibly can and cut into 3 cm squares.

Put a pea-sized piece of filling on each, bring the four corners up and pinch them together at the top.

Bring a large pan of salted water to the boil and cook the manti for 8 minutes, until they float and the dough is translucent.

Melt the butter with the tomato purée and paprika and cook 1 minute, until it turns red.

Drain the manti and divide between warm bowls.

Spoon the garlic yoghurt over, pour the paprika butter across that, and scatter the dried mint and sumac.
