-
Fill a martini glass with ice and cold water to chill it while you mix the drink.
-
Put the gin and vermouth in a mixing glass and fill it two-thirds with ice.
-
Stir steadily for 30 to 40 seconds, until the outside of the mixing glass is frosted.
-
Tip the ice and water out of the chilled glass and strain the drink into it.
-
Twist the lemon peel over the surface to release its oils, rub it around the rim and drop it in, or add an olive on a pick.
Chef’s Tips
- Stir and chill the glass. A martini is only gin and vermouth, and it has to be very cold.
- Use fresh vermouth and keep it in the fridge once opened. Stale vermouth tastes of sherry and vinegar and ruins the drink.
- Change the ratio to suit you: 3 to 1 for a wetter martini, 8 to 1 for a drier one, and a spoonful of olive brine for a dirty one.
Pairing Suggestions
- Olives and salted almonds
- Oysters
- Smoked salmon canapes
Storage & Reheating
Made to order. The gin and vermouth can be pre-mixed with a little water and kept in the freezer, and the drink is poured straight from the bottle.
