Mee goreng is the street-food answer to what to do with a packet of noodles: fry them with a sweet, salty, hot sauce and whatever else is to hand. The kecap manis, a thick sweet soy sauce, gives the dark colour and the glossy finish.

Blanch the noodles in boiling water for 1 minute and drain. Fresh yellow noodles need only loosening, and they can turn gluey if boiled. Mix the sauce first so you can add it in one go.
