Making Mexican Cauliflower Rice Bowls, Step by Step

  1. Heat the oil in a large frying pan over medium-high heat. Cook the onion for 3 minutes, until soft. Add the garlic, cumin and chilli powder and cook for 30 seconds.

  2. Add the cauliflower, tomato paste and salt and cook uncovered for 6 minutes, stirring now and then, until the cauliflower is tender and the moisture has gone.

  3. Warm the beans and corn together in a small pan for 3 minutes.

  4. Divide the cauliflower rice between four bowls and top with the beans and corn, tomatoes, avocado, cheese and cilantro. Squeeze over the lime juice.
