Some Background
It is the first sign of an autumn weekend: bacon fat in the pan and the smell of onions turning gold. A one pot breakfast puts the whole fry-up in a single vessel, with the bacon fat doing the work of the cooking oil and flavouring everything that follows.
Start with the bacon, chopped into short pieces, and let it crisp over medium heat until the fat has run. Lift the pieces out, leaving about two tablespoons of fat, and cook the potatoes in it. Small cubes cooked in a covered pan for 8 minutes, then uncovered for another 6, brown without burning and stay fluffy inside.
Put the eggs in last, in hollows. Push the potato mix aside to make four wells and crack an egg into each one. Cover the pot for 3 to 4 minutes, so the steam sets the whites while the yolks stay runny. Season the eggs at the end, not before.
Scatter the bacon back over the top with grated cheese and chives, and serve straight from the pot with hot sauce, toast and fresh fruit alongside.
