  1. Put the rum, pineapple juice, orange juice and coconut cream in a cocktail shaker with a handful of ice and shake hard for 15 seconds, until the outside is frosted and the drink is frothy.

  4. Garnish with the orange wedge and pineapple leaf and serve with a straw.

Tips for Making Painkiller

  • Shake it hard. The coconut cream and pineapple juice make a foam when shaken, and a long shake gives the drink its creamy top.
  • Grate the nutmeg fresh. It is part of the drink, and pre-ground nutmeg has lost most of its aroma.
  • Choose a dark or navy-style rum. It has a richer, more caramel flavour than white rum and stands up to the fruit.

What to Serve with Painkiller

  • Grilled prawns
  • Jerk chicken
  • Fresh pineapple

Storing & Reheating Painkiller

Best made and drunk at once. The juices and rum can be combined ahead and kept in the fridge for a day, with the coconut cream added and shaken when serving.
