Why the Method Works

This is what to bake on All Saints' Day, the first of November, when it is traditional in Portugal to eat pão de Deus, God's bread. The name describes how soft the rolls are, and they are covered with a sweet coconut paste that browns in the oven.

The dough is an enriched bread dough with eggs, butter, milk and sugar. Knead it for 10 minutes until smooth, then let it rise for 90 minutes until doubled. Divide it into ten balls and let them rise again on a tray for 30 minutes. Make the topping while the buns rise: mix desiccated coconut, sugar, eggs and a splash of milk into a thick paste.

Spread a generous spoonful on each bun, being careful not to press the dough down. Bake at 180°C / 355°F for 25 minutes, until the buns are puffed and the coconut is a deep gold. Brush them with warm apricot jam if you want a glaze. They are best fresh from the oven, split and buttered, and are also good the next day toasted.
