Pasta e Ceci

Chickpeas and broken pasta cooked into a thick soup with rosemary. Roman, cheap, and better than the sum of its parts if you blend part of it.

Method

  1. Soften the onion in the oil 8 minutes, then add the garlic, the anchovies if using, and the chilli, and cook 2 minutes.

  2. Stir in the tomato purée and cook 2 minutes.

  3. Add the chickpeas with their liquid, the whole rosemary sprigs, the salt and the water. Simmer 20 minutes.

  4. Fish out the rosemary. Blend a third of the soup until smooth and stir it back in.

  5. Add the pasta and cook it directly in the soup, stirring often so it does not catch, until al dente — usually 10 minutes.

  6. Let it stand 5 minutes off the heat; it thickens considerably.

  7. Serve with a generous pour of raw olive oil and plenty of black pepper.

  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
