Persian Love Cake

Heat the oven to 170°C / 340°F and grease and line a 23 cm round cake tin.

Beat the butter and sugar for 4 minutes, until pale and fluffy. Beat in the eggs one at a time.

Mix the ground almonds, flour, baking powder, cardamom and salt. Fold into the butter mixture in three additions, alternating with the yoghurt.

Stir in the orange zest, saffron water and rose water.

Spoon into the tin, level the top and bake for 35 to 40 minutes, until golden and a skewer comes out clean.

Cool in the tin for 10 minutes, then turn out onto a wire rack and cool completely, at least 1 hour.

Whisk the icing sugar, lemon juice and rose water into a thin glaze, drizzle over the cake and scatter with the pistachios and rose petals.
