Pollo a la Brasa
Peruvian roast chicken, marinated in soy, garlic, cumin and paprika and roasted until the skin is dark and crisp, with a green chilli and coriander sauce.

Stir the garlic, soy sauce, lime juice, vinegar, oil, cumin, paprika, ají panca paste, oregano, pepper and salt together in a small bowl.

Spatchcock the chicken by cutting out the backbone with kitchen scissors and pressing the bird flat, breast up. Rub the marinade all over it and under the skin of the breast and thighs.

Cover and refrigerate for at least 4 hours, or overnight.

Heat the oven to 220°C / 425°F. Set the chicken, skin side up, on a rack over a roasting tin.

Roast for 20 minutes, then lower the oven to 190°C / 375°F and roast for 45 to 55 minutes more, until the skin is deep golden and the thickest part of the thigh reads 74°C / 165°F.

Blend the jalapeños, coriander, mayonnaise, garlic, lime juice, water and salt until smooth.

Rest the chicken for 10 minutes, carve it and serve with the green sauce.
