How to Make Pork and Cabbage Dumplings

  1. Toss the cabbage with the salt and leave for 10 minutes. Squeeze out as much liquid as you can in a clean tea towel.

  2. Mix the cabbage with the pork, spring onions, ginger, garlic, soy sauce and sesame oil until sticky.

  3. Put a heaped teaspoon of filling on each wrapper, wet the edge with water, fold in half and pinch shut, pleating if you like.

  4. Heat half the oil in a large non-stick frying pan over medium-high heat. Arrange half the dumplings flat side down and fry for 3 minutes until golden.

  5. Pour in half the water, cover at once and steam for 5 minutes. Uncover and cook for 1 minute until the water has gone. Repeat with the rest, and serve with the soy sauce and vinegar mixed.
