-
Cook the noodles for 1 minute less than the packet says. Drain, rinse under cold water and toss with a teaspoon of the oil.
-
Toss the pork with the cornflour. Heat half the oil in a large wok or frying pan over high heat and stir-fry the pork for 3 minutes until browned. Lift out.
-
Add the remaining oil, then the garlic, cabbage and carrots, and stir-fry for 3 minutes.
-
Return the pork, add the noodles, soy sauce, oyster sauce and sesame oil and toss for 2 minutes until hot and glossy. Top with the spring onions.
What Can Go Wrong
- Rinse the noodles after boiling to stop them sticking together.
- Cook the pork in two batches if your pan is small.
- Keep everything moving in the pan so the cabbage does not scorch.
If You're Missing Something
- Out of spring onions? A small regular onion, finely sliced, or a few chives stirred in at the end both cover the job.
- An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
Good to Know About Pork Fried Noodles
It is the noodles that make or break this. Cook them for 1 minute less than the packet says, rinse under cold water and toss with a spoonful of oil, or they will clump into a block in the wok.
A hot pan is the second thing. Stir-fries need heat, and the only way to get it is to cook the pork in small batches. A crowded pan steams the meat grey.
Cabbage is the cheap filler here. It softens in the sauce and adds sweetness that the soy would otherwise lack.
Have everything ready before you light the hob. The whole cook takes 8 minutes, and there is no time to chop in the middle. Noodle dishes depend on speed, so keep the plates warm and the table laid before cooking begins. Leftover roast pork works in place of the raw pork if added at the end, which cuts the cooking time further.
