How to Make Portzelky (New Year's Cookies)

  1. Mix the flour, yeast, the 60 g of sugar, the salt and cinnamon in a large bowl. Add the milk, eggs and melted butter and mix to a soft, slightly sticky dough.

  2. Knead on a lightly floured surface for 5 minutes, until smooth. Knead in the raisins. Put the dough in an oiled bowl, cover and leave to rise for 1 hour, until doubled.

  3. Knock the air out of the dough and divide it into 24 pieces. Roll each into a ball and set on a floured tray.

  4. Cover and leave to rise for 30 minutes, until puffy.

  5. Heat the oil in a deep pan to 180°C / 350°F. Fry the balls in batches of 5 or 6 for 3 to 4 minutes, turning, until deep golden and cooked through. Lift out onto kitchen paper.

  6. While they are still hot, roll the portzelky in the cinnamon sugar. Serve warm.
