Pouding Chômeur

A stiff, plain cake batter with hot maple cream poured over it. In the oven the sauce sinks and the cake rises, and every portion has both. A Québec classic.

  1. Heat the oven to 180°C / 350°F and butter a 20 cm square baking dish.

  2. Make the sauce: put the maple syrup, cream, brown sugar, butter and salt in a saucepan, bring to a boil, then simmer for 3 minutes, stirring, until the sugar has dissolved. Keep it hot.

  3. Make the batter: beat the butter and sugar together until pale, then beat in the egg and vanilla. Stir in the flour, baking powder and salt alternately with the milk, mixing just until smooth. The batter will be thick.

  4. Spread the batter in an even layer in the dish.

  5. Pour the hot sauce slowly and evenly over the batter. Do not stir.

  6. Bake for 35 to 40 minutes, until the cake is golden and springy and the sauce is bubbling around the edges.

  7. Cool for 10 minutes, then spoon into bowls, scooping up plenty of sauce from the bottom.
