About This Recipe

The first thing you notice is the number of layers: 4 fillings, up to 10 layers of pastry, and a cake that you can see in cross section like the pages of a book. Prekmurska gibanica is the layered pastry of Prekmurje, the north east corner of Slovenia, and is a festive dessert for weddings and holidays. It is rich, so serve small pieces.

Make or buy 12 sheets of thin pastry, such as phyllo. The fillings are poppy seed cooked in sweet milk, ground walnuts with sugar and cinnamon, grated apple with sugar, and sweet curd cheese with soured cream and raisins. Prepare each in a bowl and cool them. Soak the sheets of pastry in a mixture of melted butter and milk, or brush generously, as the layers must be damp for the cake to be soft.

Layer 2 sheets, then poppy seed, 2 sheets, walnuts, 2 sheets, apple, 2 sheets, curd cheese, repeating until you finish with sheets. Pour over a mixture of soured cream and melted butter, and bake at 180°C / 355°F for 50 minutes, until the top is golden. Cool in the tin for 30 minutes and cut into squares. It keeps for 4 days.
