What Can Go Wrong

  1. Spread the pesto thinly.
  2. Roll tightly.
  3. If your oven runs hot, check at 15 minutes.
  4. Slice with a sharp knife.

The Short Version

Short and sharp: roll, slice, bake. A sheet of ready-made puff pastry does most of the work, and the filling is a spread and a handful of cheese.

Spread the pesto thinly, leaving a 2 cm border along one long edge. Too much pesto makes the roll greasy and the filling slides out. Scatter the mozzarella over the top. Roll tightly from the long side, ending on the bare border. A loose roll opens in the oven, and the pinwheels turn into flat spirals.

Chill the roll for 15 minutes so that it firms up. Slice it into 16 rounds with a sharp knife, using a gentle sawing motion rather than pressing down. A blunt knife squashes the layers.

Set the slices cut-side up on a lined tray, leaving space for them to puff. Brush with beaten egg and bake at 200°C / 390°F for 20 minutes, until they are deep gold. Serve warm.
