Short, sharp advice: keep the pastry cold. Puff pastry gets its flaky layers from butter that stays solid until it hits the oven. Warm pastry turns sticky and bakes into a dense roll.
Unroll the sheet and spread it with tomato paste, leaving a clean border along one long edge. That border is where the roll seals shut. Go easy on the toppings. Too much filling oozes out as the pinwheels bake and burns on the tray.
Roll the pastry tightly from the long side, finishing on the clean border. Chill the log for 15 minutes so it slices neatly. A sharp knife and a sawing action keep the spirals from squashing.
Bake on a lined tray until puffed and golden. Eat warm. Use ready-rolled pastry to save time. The pinwheels are good served with a little warm tomato sauce for dipping. A pinch of dried oregano over the cheese adds flavour for almost nothing.
