Puffed Wheat Squares

  1. Line a 23 cm square tin with parchment paper and butter the paper. Put the puffed wheat in a very large bowl.

  2. Put the sugar, syrup, butter, cocoa and salt in a saucepan over medium heat. Stir until the butter melts and the mixture is smooth.

  3. Bring to a boil and boil for 2 minutes, stirring constantly. Take off the heat and stir in the vanilla.

  4. Pour the hot mixture over the puffed wheat and fold quickly with a large spoon until every piece is coated.

  5. Tip into the tin and press down firmly and evenly with a buttered spatula or the back of a spoon.

  6. Chill for 1 hour, until firm. Lift out of the tin and cut into 16 squares.
