Quindim
Little glossy golden custards of egg yolk, sugar and coconut, baked in a water bath and turned out so that the coconut forms a layer on top.

Heat the oven to 180°C / 350°F and boil a kettle. Brush 12 small moulds or ramekins of about 100 ml with butter and dust them with sugar.

Stir the egg yolks and sugar together with a spoon until just combined. Do not whisk or you will make foam.

Stir in the melted butter and the coconut. Leave for 10 minutes.

Divide the mixture between the moulds. Set them in a deep roasting tin and pour in boiling water to come halfway up the sides.

Bake for 40 to 45 minutes, until set and lightly golden on top.

Lift the moulds out of the water and cool completely, at least 2 hours.

Run a knife round each one and turn out onto a plate, coconut side up.
