How to Make Rabri
Tap a step to highlight it, or turn on Cook Mode for large type and step-by-step focus.
-
Bring the milk to a boil in a wide, heavy pan, then lower the heat to medium-low.
-
Simmer for 50 minutes. Each time a skin forms on the surface, push it to the side of the pan, stirring the milk now and then.
-
Add the sugar, cardamom and saffron and cook for 10 minutes more, until the milk has thickened to about a third of its original volume.
-
Mix in the malai from the sides of the pan, breaking it into strands. Stir in the nuts.
-
Serve warm or chill for 1 hour.
Notes for Getting It Right
- Use full-fat milk; lower-fat milk does not form a good skin.
- Scrape the base occasionally so it does not catch.
- Add the sugar late, since it speeds up scorching.
