Roasted cauliflower goes wrong in two ways: it steams into a soft, pale pile, or it burns before the middle is tender. Space and heat fix both. A very hot oven and a tray with plenty of room let each floret touch the metal and brown.

Cut the florets to a similar size, toss them in oil and spices on the tray, and roast at 220°C. They need about 25 minutes to go golden at the edges and tender at the core. Turn them once. Chilli powder, cumin and smoked paprika give a taco-shop flavour, and lime at the end lifts it. Season after oiling, so the spices stick.

Corn tortillas are warmed in a dry pan. Fill with cauliflower, cabbage slaw and an avocado-lime cream, made by blending avocado, lime juice and a splash of water. Two tacos make a serving. Squeeze a little lime over any spare avocado cream and cover it tightly to keep it green.

  1. Heat the oven to 220°C / 430°F (200°C / 390°F fan). Toss the cauliflower with the oil, chilli powder, cumin, paprika, garlic powder and salt on a large baking tray and spread it in a single layer. Roast for 25 minutes, turning once, until golden at the edges and tender.

  2. Meanwhile, blend the avocado, 2 tbsp lime juice, water and salt until smooth.

  3. Toss the cabbage with the remaining 2 tbsp lime juice. Warm the tortillas in a dry pan for 20 seconds on each side.
